
The Problem with Wheat
The wheat we eat today is not like the wheat our ancestors ate. Today our wheat is genetically modified and bred to have higher gluten levels to make it easier to mass produce loaves. It is full of preservatives, insecticides and has been fumigated.
`Many people are intolerant of today’s wheat which is specifically grown to be high in gluten but may not ever realize it is the wheat (the gluten) that is causing it. Because the symptoms may not show up immediately, even a day after eating it they just think “there must be something wrong with me” and just live with it. The symptoms can range anywhere from bloating, recurrent mouth ulcers, abdominal pain, irritable bowel, fatigue, irritability, poor digestion, headaches, food cravings, sinus problems, acne, lethargy, depression and weight gain. (Fatigue is the commonest symptom of gluten intolerance).
Foods with wheat gluten:
bread, rye bread, pasta, cake, cookies, pasties, muffins, pies, crackers, biscuits, white sauces made from flour, candy, lollies, ice-cream, processed foods, soups, noodles.
Wheat may also be used in make-up, mascara, hair products and body products.

So what can you do?
Buy organic whole wheat seeds and grind your own flour…most problems occur with the wheat protein gliadin. Some people can tolerate wheat without the preservative 282. Other people can tolerate wheat types with lower gluten levels such as spelt, barley, oats and rye.
